Hex & Tonic UNDONE

A non-alcoholic G&T that changes color in the glass. UNDONE No. 2 NOT GIN and Thomas Henry Cherry Blossom Tonic sit under an indigo float of butterfly pea tea. Stir at the table and the tonic's natural acidity turns it violet, then pink. A little Halloween magic, no spell book required.

Ingredients:

2 oz UNDONE No. 2 NOT GIN
4 oz Thomas Henry Cherry Blossom Tonic
1 oz strong butterfly pea tea, chilled

ADD ALL TO CART

Instructions:

Fill a copa or coupe with ice
Add UNDONE No. 2 NOT GIN and Thomas Henry Cherry Blossom Tonic
Pour the chilled butterfly pea tea slowly over the back of a bar spoon so it floats indigo on top
Serve, then stir at the table and watch it turn violet, then pink

Bartender’s Notes

Brew the butterfly pea tea strong (2 tea bags or 2 tsp dried flowers per 4 oz hot water) and chill it fully so it floats. Serve it before stirring: the reveal is the garnish.
